4 teaspoons coconut oil, unrefined
1 1/2 lbs boneless, skinless chicken breast cut into thin strips
1 C green bell pepper, cut into thin strips
1 C red bell pepper, cut into thin strips
3 scallions sliced- separate whites and greens
1 small can bamboo shoots
24 cashews chopped into small pieces
In a large frying pan, melt coconut oil over high heat. Add chicken and cook for 3-5 minutes on each side until opaque.
Add vegetables and sprinkle with seasoning. Cover and cook over high heat for an additional 5-7 minutes, stirring occasionally until vegetables are crisp tender and chicken is fully cooked. Remove lid and sprinkle with nuts and serve hot.
