This, by far and away, is one of my favorite go-to crock pot (slow cooker) recipes that is also lean and green. Just throw everything in the crock pot, stir and walk away. When you come home, dinner is done! Recipe makes 4 hearty servings.
6 C chicken broth (or water and chicken soup base/bouillion)
1 1/2 lbs boneless, skinless chicken breasts
4 C chopped raw kale
2 oz Mexican shredded cheese for garnish (optional)
Place everything in the slow cooker, stir to combine. Put the lid on tight and cook on low for 8 hours.
Makes 4 servings
1 lean option, 1 green option and 1 condiment if you use the cheese.
